Here's an easy Super Bowl recipe to make pork roll totchos.
Ingredients:
1 32-ounce package of Tater Tots
1 6-ounce package of pre-sliced pork roll (8 slices), cut into strips
2 tablespoons unsalted butter
1 cup shredded yellow American cheese
4 eggs
How to make:
Preheat oven to 450 degrees. Arrange frozen tater tots in a single layer on a baking sheet. Bake for about 25 minutes, or until crispy. Transfer to a larger platter and cover with aluminum foil.
Melt 2 tablespoons of butter in a non-stick skillet over medium-high heat. Add the pork roll strips and cook until browned on both sides, then remove from pan. Sprinkle over tater tots, then sprinkle cheese and cover again.
Reduce heat to medium, and working two at a time, crack eggs into the skillet. Cook until the whites are completely set but the center of the yolks are still runny. (You can flip the egg if you prefer over-easy.) Using a spatula, lay the eggs over the taters tot and serve immediately (with forks).
